Heart Healthy Granola
Total cooking time: 1 hour 40 minutes
Yield: 8 servings
Ingredients
2 ¼ cups rolled oats (do not use quick oats)
¾ cups pecans, chopped
¼ cup plus 1 teaspoon firmly packed brown sugar
¼ cup plus 1 teaspoon maple syrup
3 Tablespoons avocado oil
½ teaspoon kosher salt
1 teaspoon cinnamon
½ teaspoon nutmeg
Instructions
In large mixing bowl, combine oats and nuts.
In another bowl, whisk together the brown sugar, cinnamon, nutmeg, maple syrup, avocado oil, and salt. Pour the wet mixture into the bowl with the oats and nuts. Stir well to evenly coat. Pour onto an edged pan lined with parchment paper.
Place in oven at 250° F for 40 minutes. After 40 minutes pull pan out and turn the granola over with a spatula. Slide the granola off the parchment paper and onto the pan. Discard parchment paper.
Put pan back into the oven for 30 minutes.
Remove pan and turn again. Place pan back int the oven for 30 minutes.
Remove pan from oven, cool completely. Store in rigid sealed container.
