Mary’s Taco Soup

Serves: 6 people | Total Time: about 3 hours

Ingredients

  • (1) 32 oz can stewed tomatoes

  • 1 can corn

  • 1 can pink beans

  • 1 box (32 oz) chicken broth

  • 1 small can diced jalapeños

  • 1 pack taco mix

  • 1 Tablespoon chili powder

  • 1 bunch cilantro

  • 2 chicken breasts

  • ¼ cup Greek yogurt

  • 1/4 cup scallions, chopped (white)

  • 1/4 cup scallions, chopped (green)

  • 2 avocados, chopped

  • 1 cup cheddar cheese, shredded

Instructions

  1. Load everything into a crock-pot except the Greek yogurt, cheddar cheese, avocados, and green part of the scallions.

  2. Cook on High for 2 to 2 ½ hours (until chicken is 165°).

  3. Turn the crock-pot off and take out the chicken and shred. Then, put the chicken back into the crock-pot.

  4. Mix the Greek yogurt in the crock-pot.

  5. Ready to serve – scoop into a bowl and garnish with scallions (green part), avocado, and cheddar cheese.
