Mary’s Taco Soup

Serves: 6 people | Total Time: about 3 hours
Ingredients
(1) 32 oz can stewed tomatoes
1 can corn
1 can pink beans
1 box (32 oz) chicken broth
1 small can diced jalapeños
1 pack taco mix
1 Tablespoon chili powder
1 bunch cilantro
2 chicken breasts
¼ cup Greek yogurt
1/4 cup scallions, chopped (white)
1/4 cup scallions, chopped (green)
2 avocados, chopped
1 cup cheddar cheese, shredded
Instructions
Load everything into a crock-pot except the Greek yogurt, cheddar cheese, avocados, and green part of the scallions.
Cook on High for 2 to 2 ½ hours (until chicken is 165°).
Turn the crock-pot off and take out the chicken and shred. Then, put the chicken back into the crock-pot.
Mix the Greek yogurt in the crock-pot.
Ready to serve – scoop into a bowl and garnish with scallions (green part), avocado, and cheddar cheese.
