Nancy’s Street Tacos

Ingredients
1 bag of corn tortillas
1 bag of flour tortillas
1 ½ to 2 ½ lbs skinless, bonelss chicken thighs, sliced
3 limes
5 avocados, cubed
3-4 red, yellow, or orange (mix of peppers (not green)), diced
1 onion, diced
1 bag of shredded Mexican cheese
Plain non-fat greek yogurt or sour cream (you chose!)
Olive oil
Instructions
Drizzle olive oil on a large sauté pan over medium heat till softened. Season chicken thighs with a rub (ex: paprika, salt, pepper, onion powder). Add the chicken thighs on the the stove until cooked through. Remove from pan and place on plate.
Add diced peppers to the same pan and cook for 3-4 min on medium-high heat.
Remove peppers from pan and place in a bowl.
Dice avocados and place in a bowl.
Place cheese in a bowl.
Microwave a small stack of each type of tortilla in a wet paper towel for 20 seconds.
Assemble all tortillas, cheese, peppers, chicken, sour cream (or yogurt) for everyone to make their own taco.
