Nancy’s Street Tacos

Ingredients

  • 1 bag of corn tortillas

  • 1 bag of flour tortillas

  • 1 ½ to 2 ½ lbs skinless, bonelss chicken thighs, sliced

  • 3 limes

  • 5 avocados, cubed

  • 3-4 red, yellow, or orange (mix of peppers (not green)), diced

  • 1 onion, diced

  • 1 bag of shredded Mexican cheese

  • Plain non-fat greek yogurt or sour cream (you chose!)

  • Olive oil

Instructions

  1. Drizzle olive oil on a large sauté pan over medium heat till softened. Season chicken thighs with a rub (ex: paprika, salt, pepper, onion powder). Add the chicken thighs on the the stove until cooked through. Remove from pan and place on plate.

  2. Add diced peppers to the same pan and cook for 3-4 min on medium-high heat.

  3. Remove peppers from pan and place in a bowl.

  4. Dice avocados and place in a bowl.

  5. Place cheese in a bowl.

  6. Microwave a small stack of each type of tortilla in a wet paper towel for 20 seconds.

  7. Assemble all tortillas, cheese, peppers, chicken, sour cream (or yogurt) for everyone to make their own taco.

  8. Enjoy!
