Nancy’s Street Tacos

Ingredients
6 skinless, boneless chicken breasts or thighs
½ cup avocado oil
¼ cup lime juice
4 cloves garlic, minced
1 teaspoon cumin
1 teaspoon smoked paprika
1 teaspoon chili powder
1 teaspoon chili lime seasoning
1 teaspoon garlic salt
2 Tablepoons cilantro
Other Ingredients
1 bag of corn tortillas
1 bag of flour tortillas
5 avocados, cubed
3-4 red, yellow, or orange (mix of peppers [not green]), diced
1 onion, diced
1 bag of shredded Mexican cheese
Plain Greek yogurt or sour cream (you choose!)
Olive oil
Instructions
Place chicken breasts (or thighs), avocado oil, lime juice, minced garlic, cumin, smoked paprika, chili powder, chili lime seasoning, and garlic salt in a Ziploc bag and mix well. Refrigerate for 4 hours.
Grill chicken for 5 minutes on each side or bake in oven till the internal temperature reads 165. Rest and then slice.
Drizzle olive oil on a large sauté pan over medium-high heat. Add peppers and cook untill softened.
Remove peppers from pan and place in a serving bowl.
Dice avocados and place in a serving bowl.
Place cheese in a serving bowl.
Microwave a small stack of each type of tortilla in a wet paper towel for 20 seconds.
Assemble all tortillas, cheese, peppers, chicken, avocados, and sour cream (or yogurt) for everyone to make their own tacos.
