Ingredients
Block of feta cheese
1 head of broccoli, chopped
1 head of cauliflower, chopped
1 onion, sliced
3 carrots, chopped
1 head of garlic, top sliced off
(1) 32 ounce container of chicken stock
1 small 6 ounce container of cottage cheese
2 large handfuls of spinach
1 lemon, juiced
Thyme, chopped
Salt and pepper
Instructions
Pre-heat oven to ___F°.
Prepare your vegtables.
On a sheet pan, place the broccoli, cauliflower, onion, carrots, and garlic. Drizzle with olive oil , seaon with salt and pepper then sprinkle the thyme on top.
Roast the vegtables for __-__ minutes.
Let them cool for 20 minutes before putting in blender.
Place the vegtables in a blender, squeeze garlic into blender, discarding the peel. Add in the cottage cheese, chicken stock, spinach, and lemon juice.
