Roasted Green Beans
We made this for Thanksgiving 2024 and 2025

Ingredients
1 pound fresh green beans, trimmed
1 teaspoon extra-virgin olive oil
¼ teaspoon sea salt, plus more to taste
Optional toppings
½ teaspoon fresh lemon juice
1 garlic clove, grated, optional
Toasted sliced almonds
Lemon zest
Instructions
Preheat the oven to 425°F and line two baking sheets with parchment paper.
Divide the green beans evenly between the baking sheets. Drizzle with the olive oil and sprinkle with the salt and several grinds of pepper. Toss to coat and spread evenly on the baking sheets. Roast for 14 to 16 minutes, or until tender and browned in places.
Drizzle with the lemon juice, if using, and toss to coat. Season to taste, tossing with the grated garlic, if using.
Transfer to a serving dish. Top with grated Parmesan cheese, toasted sliced almonds, and/or lemon zest, if desired.
