Alton Brown’s Guacamole

Ingredients

  • 3 avocados

  • 1 lime

  • ½ teaspoon kosher salt

  • ½ teaspoon ground cumin

  • ½ teaspoon cayenne

  • ½ medium onion, diced

  • 2 roma tomatoes, diced

  • 1 Tablespoon cilantro

  • 1 garlic clove, minced

  • 1 jalapeño, diced

Instructions

  1. In a large bowl, toss avocado and lime juice to coat. Drain and reserve lime juice.

  2. Using a potato masher, add the salt, cumin, and cayenne and mush.

  3. Fold in the onions, tomatoes, cilatro, garlic, and jalapeño. Add 1 Tablespoon of reserved lime juice.

  4. Let sit at room temperature for 1 hour and then serve.
