Alton Brown’s Guacamole
Ingredients
3 avocados
1 lime
½ teaspoon kosher salt
½ teaspoon ground cumin
½ teaspoon cayenne
½ medium onion, diced
2 roma tomatoes, diced
1 Tablespoon cilantro
1 garlic clove, minced
1 jalapeño, diced
Instructions
In a large bowl, toss avocado and lime juice to coat. Drain and reserve lime juice.
Using a potato masher, add the salt, cumin, and cayenne and mush.
Fold in the onions, tomatoes, cilatro, garlic, and jalapeño. Add 1 Tablespoon of reserved lime juice.
Let sit at room temperature for 1 hour and then serve.
