Rosemary Focaccia Bread
Ingredients
4 1/4 cups 00 flour
2.5 teaspoons kosher salt
3 teaspoons instant yeast
2 Tablespoons sugar or honey
2 cups lukewarm water
Olive oil, for greasing
Sea salt, such as fleur de sel
1 to 2 teaspoons whole rosemary leaves
Instructions
Mix first 5 ingredients until combined. In a bowl with olive oil rubbed all over place the dough in it and cover with a lid or damp towel. Place in fridge for 12-18 hours, the longer the better.
Remove dough from the fridge and place on a greased sheet tray and rest for 2-4 hours.
Preheat oven to 425 degrees.
With olive oil finger tips make dimples in the dough. Add rosemary leaves, olive oil and salt.
Bake for 25 minutes until crispy!
