Turmeric-Roasted Cauliflower

Ingredients

  • 6 heaping cups cauliflower florets (from a 1½-pound head cauliflower)

  • 3 garlic cloves, smashed

  • ¼ cup olive oil

  • 1 teaspoon turmeric

  • 1 teaspoon ground cumin

  • ¼ teaspoon crushed red pepper flakes

  • ½ teaspoon kosher salt

    2 Tablespoons fresh cilantro, chopped (optional)

Instructions

  1. Preheat the oven to 450 degrees F.

  2. Cut the cauliflower florets into 1-inch pieces and combine with the garlic in a large bowl. Drizzle with the olive oil and toss to coat.

  3. In a small bowl, combine the turmeric, cumin, pepper flakes, and salt. Sprinkle over the cauliflower and toss to coat. Spread the cauliflower out on a large rimmed baking sheet.

  4. Bake, stirring occasionally, until browned on the edges and tender, 23 to 27 minutes. Remove from the oven, sprinkle with the cilantro (if using), and serve hot.
