Gluten-Free and Dairy-Free
Banana Nut Pancakes

Yield: Four Large Pancakes

Ingredients

  • 2 medium ripe bananas (best when you start seeing brown)

  • 2 eggs

  • ½ cup unsweetened almond milk (ot substitute whatever non-dairy milk you have)

  • 1 teaspoon vanilla extract

  • 1 ½ cups old-fashioned oats (gluten-free)

  • 2 teaspoons baking powder

  • ½ teaspoon ground cinnamon

  • ¼ teaspoon nutmeg (optional)

  • ¼ teaspoon salt

  • ½ cup broken pecans

Instructions

  1. Place all the ingredients (except for the pecans) in a blender and blend for about 1 minute (until the oats are broken up). Let batter rest for 5 minutes so the baking powder starts to activate.

  2. Then cook in a pan, using Trader Joe’s coconut oil cooking spray (It adds extra flavor), spray the pan. Once you put the batter in the pan, sprinkle chopped pecans on top. Then flip when the bubbles form.
