One Pot Sausage and Spinach Pasta

Ingredients
2 Tablespoons olive oil
2 yellow onions, diced
4 cloves garlic, minced
1 ½ pounds italian sausage (sweet, spicy, or mild)
2 ½ cups water
12 oz high protein chickpea or lentil pasta (ex: Barilla protein)
2 ½ cups (20 oz) Vodka sauce (Rao’s)
¾ cup parmesan cheese, grated
4 large handfuls spinach, chopped
Instructions
Prep by dicing the two onions, mincing the garlic, chopping the spinach, and grating the parmesan cheese (if needed).
In a large pot over medium heat, add the olive oil and saute onion and garlic until softened.
Add sausage and cook until browned.
Take the sausage out of the pan and cut into small, bit-sized pieces. You can remove the skin here (especially on the ends) if you like. Return the cut sausage to the pan.
Pour in water, pasta, and vodka sauce and bring to a boil. Reduce and simmer until the pasta is cooked through (according to box instructions) and the sauce has thickened up.
Stir in parmesan cheese and spinach. Serve!
