Crockpot Whole Chicken

Ingredients

  • 1 whole chicken (4–6 lbs)

  • 2 onions

  • 2 Tablespoons olive oil

  • ½ teaspoon paprika

  • 1 teaspoon Italian seasoning

  • ¼ teaspoon garlic powder

  • 1 teasponn salt

  • 1 teaspoon pepper

Instructions

  1. Peel the onions and cut them into thick slices. Arrange them in an even layer in the bottom of the crock pot.

  2. Place the whole chicken breast-side up on top of the onions.

  3. Brush the olive oil evenly over the chicken.

  4. In a small bowl, combine the paprika, Italian seasoning, garlic powder, salt, and pepper.

  5. Sprinkle the seasoning mixture over the chicken and brush it evenly across the skin.

  6. Cover and cook on low for 4–6 hours or on high for 2–3 hours, until the chicken reaches an internal temperature of 165°F in the thickest part of the thigh.

    Check internal temperature at 3 hours and 3 ½ hours

  7. Carefully remove the chicken from the crock pot and let it rest for 5–10 minutes.

  8. Slice and serve warm.

Notes

If you want to have crispy skin like you get with roasted chicken, place the chicken in a baking dish or cookie sheet and broil for 4–5 minutes. Just keep an eye on it so it doesn’t burn!

Refrigerate the leftovers in an air tight container for up to 5–7 days.
