Marry Me Chicken Orzo

Ingredients

Cookie dough base layer:

  • 1 Tablespoon olive oil

  • 2 pounds boneless skinless chicken breasts, diced

  • ⅔ cup sun dried tomatoes in oil, drained and chopped into small pieces

  • 2 teaspoons garlic powder

  • 2 teaspoons italian seasoning

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon smoked paprika

  • 1 cup orzo

  • 2 ½ cups chicken bone broth

  • ¾ cup full-fat coconut milk

  • 5 cups baby spinach

  • ½ cup parmesan cheese, grated

Instructions

  1. Heat olive oil over medium-high heat in a large pan (3-in or higher sides) and add chicken. Cook for 3 minutes, then add the sun-dried tomatoes and spices. Turn the heat down to medium and cook for 5 minutes, then pour in the orzo and broth. Stir, cover, and cook 10–15 minutes or until orzo is tender.

  2. Pour in coconut milk and spinach, stir until spinach wilts.

  3. Stir in parmesan cheese and serve!

    Note: side options would be grilled lemony asparagus or roasted broccoli.
