Roasted Red Peppers

Total Time: 20 min | Prep Time: 5 min | Cook Time: 3-5 min

Ingredients

  • Red peppers, cut in half (leave seeds)

Instructions

  1. Turn broiler on high

  2. Rinse peppers and dry completely

  3. Put foil on baking sheet and place peppers on baking sheet face down.

  4. Place in oven and check in 3-5 minutes (they will blacken quickly). Turn with tongs and roast another few minute. Continue until ALL sides are black.

  5. Remove from oven and place in paper bag and let them cool.

  6. When cool enough to handle, peel skin off and scoop out the seeds and innards.

  7. Stick in a jar in the fridge.

  8. step 8: Slice peppers into thin strips and put in a container and cover peppers with olive oil and two smashed garlic cloves. Season with salt and pepper and store in the fridge. Refrigerate up to a month.
