Honey Cranberry Chicken Bake with Feta Cheese

Ingredients
4 boneless, skinless chicken breasts (about 680 g)
Salt, to taste
Black pepper, to taste
1 tbsp (15 ml) olive oil
½ cup (120 ml) honey
1 cup (100 g) fresh or frozen cranberries
1 tbsp (15 ml) balsamic vinegar
1 tsp (2 g) fresh rosemary, finely chopped
½ cup (75 g) crumbled *feta cheese
1 Tablespoon (15 g) chopped walnuts (optional)
Fresh thyme for garnish
*Note that the original recipe called for goat cheese
Instructions
Preheat oven to 400°F (200°C). Lightly grease a baking dish with olive oil.
Season chicken breasts with salt and pepper, then sear them in a hot skillet with olive oil for 2–3 minutes on each side until lightly golden.
In a small bowl, mix honey, balsamic vinegar, rosemary, and cranberries. Pour the mixture over the seared chicken in the baking dish.
Bake for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
Remove from the oven and top each chicken breast with crumbled feta cheese and chopped walnuts.
Return to the oven for 3–5 minutes, just until the cheese softens. Garnish with fresh thyme before serving.
